Sustainable Active Food Packaging
Food packaging is a subject of interest for food producers and marketers and for increasingly conscious consumers who recognize its significant influence on food product quality and environmental sustainability. Commonly used materials for food packaging include plastic, glass, metal, and paper. Nevertheless, edible films have gained popularity and are now widely employed for various food categories like meat, vegetables, and dairy products. Proteins, in particular, have emerged as excellent materials for creating edible and non-edible coatings and films. This presentation will provide an overview of the utilization of biopolymers in food and edible packaging, highlighting their functionalization, antioxidant, antimicrobial, and antifungal properties and examining the economic aspects. Additionally, mechanical properties, thickness, moisture content, water vapor permeability, sensory characteristics, and environmental suitability play significant roles in using biopolymer-based packaging materials.
